Beggar’s chicken is a tradational asian dish and is said to be a thief's delicacy. The story goes thet a beggar stole a chicken from a feudal lord. To stop the cooking smells attracting attention, the beggar first wrapped the bird in a lotus leaf and mud from the lotus pond. If have access to clay you can rap the chicken in clay or a suitable alternative is to make a salt dough. Ingredients whole chicken sea salt and freshly ground black pepper large lemon 1 whole bulb of garlic handful of fresh thyme olive oil Salt Dough 1kg salt 4 cups offlour 2 cups of water Combine all salt and flour and mix it with an electric mixer while adding water (about 1.5 cups of water). Keep adding water until you have a firm dough. Do not eat the cooked dough; it’s too salty! Rub the inside and outside of the chicken with salt and pepper and olive oil. Cut a number of holes in the lemon and put in the chicken cavity along with garlic cloves and thyme. Roll out clay or dough and rap the chicken so it is comptely covered with no gaps. Put in oven tray and cook for around 2 hours. It is very hard to over cook the chicken as exact cooking time in not important but will depend on how hot you have your oven. Remove chicken from oven, gently break open the clay with hammer (if needed)
